Justin's love for cooking started 27 years ago as a server in a small Palestinian restaurant. His boss — now friend and mentor — Samir Abu-Ali introduced an entire world of concepts and flavors to him at a pivotal point in his life. He is excited fpr the chance to share some of the recipes he learned during that time, showing us how to blend together local ingredients with traditional cooking techniques.
For this online class, Justin will show us how to make Waraq Dawali, the Palestinian version of stuffed grape leaves. Grape leaves are an abundant and often overlooked ingredient in our local Foodshed. He'll talk about where to source grape leaves locally and how to prepare them for use. The fillings you can use to stuff the grape leaves are infinitely adaptable. For this course, he'll show you how to make two delicious versions: one with lamb and a vegetarian option.
